Gluten-Free Peanut Butter Cookies


  • 2 cups peanut butter (I use unsweetened organic)
  • 2 cups white sugar
  • 4 eggs, beaten
  • 1 cup chopped pecans (optional, but delicious!)
  • 1/4 cup ground flaxseed (for fibre and omega 3!)

    1. Preheat oven to 350 degrees F.  Grease cookie sheet (optional-I find the peanut butter has a high enough oil content that this step is not necessary)
    2. Combine peanut butter, eggs, and sugar and mix until smooth. Stir in chopped pecans and ground flaxseed.
    3. Bake for 10 -12 minutes or until lightly browned. Let cookies cool on cookie sheet for a few minutes before serving. Enjoy!
    *Note: For an extra sweet treat, add a gluten-free chocolate molding wafer to the top of each cookie when they are fresh out of the oven.
