Jamie Oliver's Granola...sort of


2 cups oatmeal (fast cooking, but not instant)
1 cup chopped nuts (almonds, walnuts, pecans, etc)
1/4 cup mixed seeds (chia, sunflower,pumpkin, sesame)
2 tbsp ground flaxseed (Optional. Adds more fiber and Omega 3)
3/4 cup unsweetened shredded coconut
1 teaspoon ground cinnamon
1 cup dried fruit (apricots, apples, raisins, cranberries)
5 tablespoons maple syrup (or dark Agave)
5 tablespoons extra-virgin olive oil


Directions:

Preheat oven to 350. Put your dry granola ingredients including coconut and cinnamon, except for the dried fruit on a cookie sheet. Stir well and smooth out. Drizzle maple syrup and olive oil over the mixture. Place in the preheated oven for 25 to 30 minutes. Stir every 5 minutes with a wooden spoon and return to the oven. While it is baking, chop up dried fruit. When the granola is golden, remove it from the oven and add the dried fruit. Once cooled, place inside sealed container for up to 2 weeks.

Tip: Instead of using cow's milk, I use unsweetened almond milk. Tastes great!!
