Crockpot Beef Tips & Gravy with Cauliflower Mashed "Potatoes"

I'm craving something meaty and hearty, on this damp day. After many suggestions from friends, I've decided to try a recipe for beef tips. The glutton in me wants to pair it with mashed potatoes and mixed veggies, but after trying cauliflower in place of rice last week, I think this is the perfect opportunity to make cauliflower in place of mashed potatoes. Crockpot Beef Tips & Gravy
Yield: 4 servings
Recipe from The Country Cook

  • 1 1/2 lbs cubed beef (stew meat)
  • 1 packet Dry Onion Soup Mix
  • 1 can Cream of Mushroom Soup (although Cream of anything will work)
  • 1 14 oz. can beef beef broth or stock
  • Salt & Pepper
  1. Add beef cubes to Crockpot, season with salt & pepper.
  2. In bowl combine soup mix, soup & broth, stir to combine.
  3. Dump mixed ingredients over top of beef, stir.
  4. Cook on low 6-8 hours.

Whipped Cauliflower “Potatoes"

  • 1 Large Head Cauliflower
  • 3 Garlic Cloves
  • 1/4 Cup Fresh Herbs (chives work particularly well)
  • Sea Salt
  • Fresh Ground Pepper
  • ½ Cup Onion
  • 2 Tbsp Olive Oil
  1. Chop cauliflower into smaller chunks – about bite-size pieces works well.
  2. Peel garlic cloves and cut in half, lengthwise. Chop onion into slices.
  3. Steam cauliflower, garlic and onion for 15 minutes, or until cauliflower and garlic are tender enough for a fork to easily pass through.
  4. Combine steamed cauliflower, garlic, onion, olive oil, fresh herbs, pepper, and sea salt in a food processor and blend until everything comes together into a mashed potato-like consistency.
  5. Top with a little pepper for looks and enjoy your guilt-free whipped potatoes.
